New-to-Alabama Local Taco chain coming to Huntsville development

The Whole Foods-anchored Shops at Merchants Walk development in Huntsville will welcome another restaurant to its mix next spring.

Local Taco, a 6-year-old chain founded in Nashville, will launch a 3,500-square-foot restaurant with covered outdoor seating on the northeast corner of Bob Wallace Avenue and Memorial Parkway. The company, which has eateries in Tennessee, Kentucky and South Carolina, will specialize in tacos, enchiladas, fresh-squeezed margaritas, gluten-free food, vegetarian and lighter options, salads and roasted street corn.

The Huntsville site will be Local Taco’s first restaurant in Alabama.

“We are delighted to join and serve the community,” said CEO Craig Perry.

Local Taco is one of several tenants on track to open at the Shops at Merchants Walk in the next few months. Maki Fresh Sushi Rolls & Japanese Grill, Farm Burger, Spa Sydell, Orangetheory Fitness, Mountain High Outfitters, The Masters Aveda Salon and a showroom for lululemon athletica will begin operating there soon.

Local Taco, which will use Huntsville-area design elements, will also provide full-service catering to serve large-scale weddings, conventions, office lunches and other events.

RCP Companies, a boutique real estate firm in Huntsville, is developing the Shops at Merchants Walk. Spokeswoman Lindsay Harper said construction is nearing completion at the mixed-use complex.

“Local Taco is a fantastic addition to the eclectic mix of shopping and dining tenants at The Shops at Merchants Walk,” she said.
